Roasted Sweet Potato Toasts with Avocado and Lemon

INGREDIENTS :
  • 1 sweet potato
  • 1 avocado, flesh cubed
  • 1 tablespoon fresh thyme leaves
  • 1/2 lemon
  • 1/4 cup crushed walnuts
  • 1 tablespoon extra virgin olive oil

Method :

1.      Slice the sweet potato lengthwise into ¼ inch slices
2.      Place the slices in a toaster on high for around 5 minutes or until cooked through. You may need to toast multiple times depending on your toaster settings. Alternatively, place a grill on high and arrange the slices on a lined baking sheet with a drizzle of oil.
3.      Top the cooked potato toasts with the cubes of avocado, then sprinkle over the thyme leaves.
4.      Zest the lemon and sprinkle over your toasts, using the juice to drizzle over the top.
5.      Sprinkle over the walnuts and finish with a drizzle of oil. Season and enjoy warm.
